Yummy in your tummy!

I've spent a lot of time perusing the Canadian Living Barbecue Collection so far this summer and had some fabulous meals as a result. I've used lots of recipes from Canadian Living publications over the years and they all have one thing in common. You can trust the recipes. Unlike lots of cookbooks, they test everything repeatedly before it gets added to their book, so you can be sure that the recipe actually works.

The other thing I like about this book is the common sense approach to cooking. The recipes are straightforward and easy to make, with readily available ingredients used in interesting ways. Of course, the real test of any cookbook is the taste of the food, and everything I have made from this book has been delicious. I've adapted some of the recipes, as I tend to do, but I've also used it as a reference book. Every time I open it I find something that I would like to make.The recipes are all on one page, and give you the nutritional breakdown for each recipe. There are lots of beautiful full colour photographs to draw you in as well.

However, if you are a vegetarian, this is not the book for you. It is very heavily weighted to meat recipes, with an entire section devoted just to burgers and another to sausages. There is a section for vegetables as well as salads, but they are largely side dishes. There is only one tofu recipe listed, plus another that is adapted from a chicken recipe. I've actually adapted a few of the recipes for tofu, but I really felt there could have been a a few more recipes devoted to vegetarian meals. I was also surprised to see how little there was on fruit, because it is so popular now to grill different fruits. This is a relatively minor quibble, given how good the rest of the book is.

This recipe is actually for full chickens, but I had chicken breasts. I actually marinated the breasts in the basting liquid because they wouldn't be cooking long enough to baste them. It worked out beautifully and we had a lovely simple grilled chicken for dinner. I'll give you the recipe as written in the Canadian Living Barbecue Collection. If you don't have a rotisserie, then cook it on indirect heat by heating the barbeque on one side and putting the chicken on the other.
