Orange-Mango Dressing

This recipe is part of the recipe for Caribbean Coleslaw


1/2 mango, peeled, pitted and cubed
1 carton (6 ounces) plain nonfat yogurt
1/4 cup frozen orange juice concentrate
3 tablespoons lime juice
1/2 to 1 jalapeño pepper,* stemmed, seeded and minced
1 teaspoon finely minced fresh ginger

*Jalapeño peppers can sting and irritate the skin, so wear rubber gloves when handling peppers and do not touch your eyes.


  1. Place mango in food processor; process until smooth. Add remaining ingredients; process until smooth.
