Orange-Thyme Granita in Cookie Cup

INGREDIENTS
| 2‑1/2 | cups fresh orange juice |
| 1/2 | cup fresh lemon juice |
| 1/4 | cup sugar |
| 1 | teaspoon finely chopped fresh thyme |
| 6 | Lemon Anise Cookie Cups (recipe) |
| Fresh mint leaves (optional) | |
| Lemo peel (optional) | |
PREPARATION:
- Combine juices, sugar and thyme in medium bowl; stir until sugar dissolves. Freeze until slightly firm, about 1 hour. Beat with wire whisk to break ice crystals. Repeat freezing and beating process 2 to 3 times until ice is firm and granular.
- Meanwhile, prepare Lemon Anise Cookie Cups. To serve, scoop 1/2 cup granita into each cookie cup. Garnish with mint and lemon peel.
