INGREDIENTS

1/2 pound Sweet Italian Sausage
1/2 pound Parsley & Cheese Sausage
Broccoli Rabe
10 cloves of garlic chopped
2 Tablespoon Olive Oil
Salt and Pepper
1 cup Chicken Stock
1/4 cup Grated Romano
1/4 cup Grated Parmesan
1 Teaspoon Red Pepper Flakes
(loose meat out of the casing so it's like ground pork)

PREPARATION:

  1. Place pan on low heat. Add olive oil and garlic and cook until fragrant.
  2. Remove casings on Sweet Italian sausage and Parsley and Cheese sausage. Add sausage to pan and cook until browned.

    This should take about 10 – 12 minutes then lower heat to medium.

  3. While the sausage is cooking, put a large pot of salted water on to boil.
  4. Chop the broccoli rabe into 2-inch pieces and add to boiling water. Cook for 5 minutes and then take it out and drain it and put into sausage mixture.
  5. Place 1 lb of orchiette into the same boiling water that the broccoli rabe was cooked in. Cook until al dente.
  6. Meanwhile, put 1 cup of chicken broth, salt and pepper into sausage mixture and let liquid reduce by half.
  7. Once reduced, turn the heat off and add 1 teaspoon of red pepper flakes, ¼ cup of Romano cheese, ¼ cup of parmesan and the cooked pasta. Toss together and serve.
