Orchiette with Broccoli Rabe and Sausage

INGREDIENTS
| 1/2 | pound Sweet Italian Sausage |
| 1/2 | pound Parsley & Cheese Sausage |
| Broccoli Rabe | |
| 10 | cloves of garlic chopped |
| 2 | Tablespoon Olive Oil |
| Salt and Pepper | |
| 1 | cup Chicken Stock |
| 1/4 | cup Grated Romano |
| 1/4 | cup Grated Parmesan |
| 1 | Teaspoon Red Pepper Flakes |
PREPARATION:
- Place pan on low heat. Add olive oil and garlic and cook until fragrant.
- Remove casings on Sweet Italian sausage and Parsley and Cheese sausage. Add sausage to pan and cook until browned.
This should take about 10 – 12 minutes then lower heat to medium.
- While the sausage is cooking, put a large pot of salted water on to boil.
- Chop the broccoli rabe into 2-inch pieces and add to boiling water. Cook for 5 minutes and then take it out and drain it and put into sausage mixture.
- Place 1 lb of orchiette into the same boiling water that the broccoli rabe was cooked in. Cook until al dente.
- Meanwhile, put 1 cup of chicken broth, salt and pepper into sausage mixture and let liquid reduce by half.
- Once reduced, turn the heat off and add 1 teaspoon of red pepper flakes, ¼ cup of Romano cheese, ¼ cup of parmesan and the cooked pasta. Toss together and serve.
