Makes 4 servings
|1/4||cup peanut or vegetable oil|
|1/4||cup rice vinegar|
|2||tablespoons brown sugar|
|1/2||medium unpeeled cucumber, halved and sliced|
|6||cups torn romaine or leaf lettuce|
|1||cup chow mein noodles|
|1/4||cup peanut halves or coarsely chopped cashews (optional)|
- Combine oil, vinegar and brown sugar in small bowl; whisk until sugar dissolves.* Toss with cucumbers. Marinate, covered, in refrigerator up to 4 hours.
- Just before serving, toss dressing with remaining ingredients.
