Oriental Salad Supreme

INGREDIENTS
| 1/4 | cup peanut or vegetable oil |
| 1/4 | cup rice vinegar |
| 2 | tablespoons brown sugar |
| 1/2 | medium unpeeled cucumber, halved and sliced |
| 6 | cups torn romaine or leaf lettuce |
| 1 | cup chow mein noodles |
| 1/4 | cup peanut halves or coarsely chopped cashews (optional) |
PREPARATION:
- Combine oil, vinegar and brown sugar in small bowl; whisk until sugar dissolves.* Toss with cucumbers. Marinate, covered, in refrigerator up to 4 hours.
*At this point, dressing may be tossed with remaining ingredients and served immediately.
- Just before serving, toss dressing with remaining ingredients.
