Pan-Cooked Bok Choy Salmon

Makes 2 servings

Ingredients

1 pound bok choy or napa cabbage, chopped
1 cup broccoli slaw
1 tablespoon olive oil
1 teaspoon sesame seeds
1/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 pound cooked salmon

Preparation

  1. Mix cabbage and broccoli and place in colander; rinse and drain. Place olive oil and sesame seeds in large skillet, over medium heat. When oil is hot, add cabbage mixture. Cook and stir 3 to 4 minutes; reduce heat to low and add salmon. Steam fish and vegetables about 4 minutes. Season with salt and freshly ground black pepper.
