Papaya Pops

Yield: Makes 4 servings
Ingredients:

very ripe papaya
1
cup peach or vanilla nonfat yogurt
2
tablespoons honey
1
teaspoon lime juice
3/4
teaspoon grated lime peel
Preparation:
1.
Cut papaya lengthwise into halves; discard seeds. Scrape out flesh with spoon; discard skin. Combine papaya, yogurt, honey, lime juice and lime peel in blender or food processor. Process until smooth.

Fill four 5-ounce paper or pliable plastic cups with papaya mixture. Freeze 20 minutes. Insert wooden ice cream stick or plastic spoon in center of each cup. Freeze 8 hours or overnight until firm.
3.
To serve, peel away paper cup or gently twist and ease frozen pop out of plastic cup.
