Ingredients

1 pound of mild Italian sausage
2 pounds of Red and Yellow Sweet Bell Peppers
30 Cherry Tomatoes—halved (the riper, the better)
3 Tablespoons Unsalted Butter—(A little less than a 1/2 stick)
4 Tablespoons Extra Virgin Olive Oil
1 Small Red Onion
4 Leaves of Fresh Basil—finely chopped

Preparation

  1. Wash the peppers and remove the stems. Cut each pepper into two halves and remove and discard the seeds from inside the peppers. Slice the peppers lengthwise– but not too thin.
  2. Sauté the pepper in pan in peanut oil for 5–10 minutes until soft– this makes them easier to digest and also brings out the flavor. Once the peppers are cooked, place them on a paper towel or napkin to soak the extra oil.
