INGREDIENTS

1 banana, sliced
2 tablespoons orange juice
2 tablespoons peanuts, chopped
1 tablespoon honey
6 slices whole wheat bread
1/4 cup grape jelly (or favorite flavor)
1/4 cup peanut butter
2 eggs
1/4 cup milk
2 tablespoons butter

PREPARATION:

  1. Combine banana, orange juice, peanuts and honey in small bowl; set aside. Spread 3 slices of bread with jelly and 3 slices with peanut butter. Press peanut butter and jelly slices together to form 3 sandwiches; cut each sandwich diagonally in half.
  2. Beat eggs and milk in shallow bowl. Dip sandwiches in egg mixture. Melt butter in large nonstick griddle or skillet over medium-high heat. Cook sandwiches about 2 minutes on each side or until lightly browned.
  3. Serve French toast warm; top with banana mixture.
