Peasant Risotto

This low fat dish is an Italian rice specialty made by adding warm broth to a mixture of rice, garlic, green onions and sage. The addition of Swiss chard gives it a nutritional boost.

Yield

Makes 4 servings

Ingredients

1 teaspoon olive oil
3 ounces chopped low-fat turkey ham
2 cloves garlic, minced
1 cup arborio or white short-grain rice
1 can (15 ounces) Great Northern beans, rinsed and drained
1/4 cup chopped green onions with tops
1/2 teaspoon dried sage leaves
2 cans (14 ounces each) reduced-sodium chicken broth, heated
1-1/2 cups Swiss chard, rinsed, stemmed and shredded
1/4 cup freshly grated Parmesan cheese

Preparation

  1. Heat oil in large saucepan over medium heat. Add turkey-ham and garlic; cook and stir until garlic is browned. Add rice, beans, green onions and sage; mix well. Add warm broth; bring to a boil. Reduce heat to low. Cook about 25 minutes or until rice is creamy, stirring frequently.
  2. Add Swiss chard and Parmesan; mix well. Cover; remove from heat. Let stand, covered, 2 minutes or until Swiss chard is wilted. Serve immediately.
