This low fat dish is an Italian rice specialty made by adding warm broth to a mixture of rice, garlic, green onions and sage. The addition of Swiss chard gives it a nutritional boost.
Makes 4 servings
|1||teaspoon olive oil|
|3||ounces chopped low-fat turkey ham|
|2||cloves garlic, minced|
|1||cup arborio or white short-grain rice|
|1||can (15 ounces) Great Northern beans, rinsed and drained|
|1/4||cup chopped green onions with tops|
|1/2||teaspoon dried sage leaves|
|2||cans (14 ounces each) reduced-sodium chicken broth, heated|
|1-1/2||cups Swiss chard, rinsed, stemmed and shredded|
|1/4||cup freshly grated Parmesan cheese|
- Heat oil in large saucepan over medium heat. Add turkey-ham and garlic; cook and stir until garlic is browned. Add rice, beans, green onions and sage; mix well. Add warm broth; bring to a boil. Reduce heat to low. Cook about 25 minutes or until rice is creamy, stirring frequently.
- Add Swiss chard and Parmesan; mix well. Cover; remove from heat. Let stand, covered, 2 minutes or until Swiss chard is wilted. Serve immediately.
