Pineapple-Orange Granita

Makes 7 servings

Ingredients

2 cups pineapple-orange juice
6 ounces diet ginger ale (3/4 cup)
1/4 cup white wine or white grape juice
1 packet sugar substitute

Preparation

  1. In a quart-size resealable bag, combine all ingredients. Seal tightly and store in freezer until firm.
  2. At time of serving, remove from freezer and let stand 15 minutes to soften slightly.
  3. Using a meat mallet, pound to crush ice mixture. Spoon into wine goblets or dessert dishes. Store remaining ice mixture in freezer until needed.
