Poached Salmon with Basil Mayonnaise

Yield: Makes 4 servings
Ingredients:
Basil Mayonnaise (recipe follows)

bay leaf

4
peppercorns

4
salmon steaks, 1 to 1-1/2 inches thick

1/2
cup mayonnaise

1/2
cup sour cream or plain yogurt

1
green onion, cut into 1-inch pieces

2
tablespoons fresh parsley

2
tablespoons fresh basil

Salt and pepper



Preparation:
1.
Prepare Basil Mayonnaise; cover. Set aside.

2.
Add bay leaf, peppercorns and enough water to medium skillet to fill to 1-inch depth. Bring to a boil. Add salmon.

3.
Reduce heat; cover. Simmer 5 minutes or until salmon flakes easily when tested with fork.

4.
Remove salmon from poaching liquid; serve with Basil Mayonnaise.


Basil Mayonnaise: Combine mayonnaise, sour cream, onion, parsley and basil in food processor or blender container; process until well blended. Season with salt and pepper to taste.
