Prosciutto with Figs and Balsamic Vinegar

Episode 98: Sabrina's Menu


Serves 4


1/2 cup/120 ml balsamic vinegar
12 thin slices of prosciutto di Parma
3 fresh figs, cut into quarters, or 1 red Anjou pear, cored and cut into wedges
Crusty bread, to serve


  1. Simmer the balsamic vinegar in a heavy small saucepan over medium heat for 10 minutes or until it is reduced by half and coats the bottom of the pan when the pan is tilted. Set aside and cool. The balsamic reduction will continue to thicken and become syrupy as it cools.
  2. Arrange 3 slices of prosciutto in the center of each of 4 large plates. Place the figs or pears in the center of the prosciutto.  Drizzle the balsamic reduction around the prosciutto and serve with the crusty bread.
