Yield: Makes 1 serving
Ingredients:
1/2
large Granny Smith Apple, cored and sliced thin
1
tablespoon lemon juice
2
teaspoons spoonable brown sugar substitute
1/4
teaspoon cinnamon
1/2
teaspoon vanilla
1
teaspoon raisins (about 15)
2
tablespoons fat-free whipped topping
Preparation:
1.
In mixing bowl, toss apple slices with lemon juice, brown sugar substitute, cinnamon and vanilla.
2.
Lightly spray microwavable serving bowl with vegetable cooking spray. Distribute raisins in bottom of bowl. Arrange apple slices in a spiral pattern to cover raisins. Scrape any juices in bowl over apples.
3.
Cover bowl with waxed paper and microwave on high for 3 minutes. Remove from microwave and let sit, covered, an additional 5 minutes.
4.
Tip bowl and spoon juices over top of apples. Serve warm or at room temperature with whipped topping.
Note:
Recipe can be doubled; use two bowls. It's important to measure accurately.
