Quick Fruit & Lemon Drops
Yield: Makes about 2 dozen cookies
Ingredients:
1/2
cup sugar

1
package (about 18 ounces) lemon cake mix

1/3
cup water

1/4
cup (1/2 stick) butter, softened

1
egg

1
tablespoon grated lemon peel

1
cup mixed dried fruit bits



Preparation:
1.
Preheat oven to 350°F. Grease cookie sheets. Place sugar in shallow bowl.

Beat cake mix, water, butter, egg and lemon peel in large bowl with electric mixer at low speed until well blended. Beat in fruit bits just until blended.

3.
Shape dough by heaping tablespoons into balls; roll in sugar to coat. Place 2 inches apart on prepared cookie sheets.

4.
Bake 12 to 14 minutes or until set. Let cookies stand on cookie sheets 2 minutes.; transfer to wire racks to cool completely.


Note: If dough is too sticky to handle, add about 1/4 cup all-purpose flour.
