Quinoa Sweet Cakes

INGREDIENTS
| 1 1/2 cups | cooked quinoa |
| 1 | jumbo egg, beaten |
| 1/3 cup | nuts, chopped |
| 2 tbsp | brown sugar |
| 1/2 cup | mixed berries |
| 1/2 tsp | cinnamon |
PREPARATION:
Method
- Stir your beaten egg into the quinoa with a fork and let it sit for about five minutes. It will really start to bind now.
- Add the remaining ingredients.
- Melt a little butter or heat up some oil in a pan (about a teaspoon, just a light coating) on medium to medium-high heat and add a 1/3 cup scoop of the batter. Cook for a good four minutes before flipping. If the cake breaks, gently press it back together with your spatula. After another four minutes on the second side the cake should be good to go. You'll have a nicely seared and browned surface on the top and bottom and that soft-n-warm quinoa goodness on the inside.
