Raw Tahini Dressing
I talked yesterday about how I was trying to eat tons of raw, local veggies this week in repentance of last week's vacation of over indulgence and there's a lot more where that came from. The raw food diet uses less waste because whole foods produce very little non-compostable packaging and you don't have to use energy cooking the foods. But you don't have to be on the raw food diet to make these recipes. In fact this tahini recipe is to die for and will make all your favorite veggies go down like French fries. Tahini is sesame seed paste and sesame seeds are a very good source of manganese and copper. They are also a good source of calcium, iron, phosphorus, Vitamin B1, zinc, and dietary fiber. Tahini has a thick nutty flavor that?s great paired with lemon juice.
INGREDIENTS
| Raw Tahini Dressing: | |
| 4 oz. | organic raw tahini |
| 1 tbsp | organic olive oil |
| 1 | large clove of garlic |
| 1/2 | lemon, juiced |
| Pinch of cayenne pepper | |
| Namo Shoyu soy sauce | |
| 1/4 tsp | freshly cracked pepper |
| Shoe String Veggie Salad | |
| 1/2 cup | summer radishes |
| 1/4 cup | fresh lemon juice |
| 1 | local cucumber, peeled |
| 1 | carrot, peeled |
| 1 | scallion, chopped finely |
| 1/4 cup | raw cashews, ground |
| 2 tbsp | raw tahini dressing |
| Sea salt to taste | |
PREPARATION:
Raw Tahini Dressing:
- Blend all ingredients with a bit of water to make a dressing consistency. Add Namo Shoyu to taste.

Shoe String Veggie Salad
- Slice the radishes very thinly on a mandolin.
- Soak the radishes in the lemon juice for about four hours to reduce spicy flavor.
- Using a vegetable peeler, peel the cucumber and carrots into long spirals.
- In a bowl add drained radishes, cucumber, carrots, scallions, and cashews.
- Toss with tahini dressing until each part is evenly coated.
- Plate up on a minimal plate and garnish with a slice of Meyer lemon.
