Red Pepper Relish
Yield: Makes 4 servings
Ingredients:

large red bell peppers, cut into thin strips

small Vidalia or other sweet onion, thinly sliced

tablespoons cider vinegar
2
tablespoons packed light brown sugar
1
tablespoon vegetable oil
1
tablespoon honey
1/4
teaspoon salt
1/4
teaspoon dried thyme
1/4
teaspoon red pepper flakes
1/4
teaspoon black pepper
Preparation:

Combine all ingredients in slow cooker; mix well. Cover; cook on LOW 4 hours.
