Red Snapper with Lime-Ginger Butter

INGREDIENTS
| 5 | tablespoons butter, cut into small pieces |
| 1 | tablespoon lime juice |
| 3 | cloves garlic |
| 2 | teaspoons ground ginger |
| 1/2 | teaspoon hot pepper sauce |
| Salt | |
| Black pepper | |
| 6 | red snapper fillets (about 1-1/2 pounds) |
PREPARATION:
- Preheat broiler.
- Combine butter, lime juice, garlic, ginger, pepper sauce, salt and pepper to taste in food processor; process until smooth paste forms.
- Broil red snapper 4 to 5 inches from heat 5 minutes. Turn fillets over and broil 4 minutes.
- Place about 1 tablespoon reserved butter mixture on top of each fillet; broil 45 seconds. Serve immediately.
Serving Suggestion
For a special touch, serve fish with rice and garnish with fresh lime slices and chives.
Tip
Halibut or swordfish can be substituted for the red snapper.
