Rhubarb Agua Fresca

This has been such a hot summer so far and it's hard to stay cool and hydrated. Tap water is wonderful to drink, but sometimes you want something with a bit of flavour as well. Our friend Rebecca made us these drinks with rhubarb syrup and it was delightfully refreshing. We tried them alcohol free and then we tried them with a bit of white wine in them. It was delicious with the wine in it, but I found it masked the rhubarb flavour a bit and I preferred it without wine.

This is a great light drink to serve at a barbeque or a brunch without any of the sugar and chemicals in soda pop. Make the rhubarb syrup ahead of time and let it get cold, then add the sparkling water. I'm sure you could try this with other fruits as well. Don't discard the pulp, add it to yogurt or mix it in with your muesli in the morning.

INGREDIENTS

3 or 4 stalks of rhubarb
sugar to taste
sparkling water
fruit for garnish

PREPARATION:

  1. Place rhubarb and sugar in a pot and add a cup of water. Bring to a boil, then reduce heat and cook until the rhubarb is very soft. Taste for sugar.
  2. Place rhubarb in a fine sieve over a bowl and allow it to drain completely. Refrigerate syrup until ready to use. Refrigerate pulp for another use.
  3. Pour 2 or 3 ounces of rhubarb syrup into a wine glass. Add sparkling water and garnish with fresh fruit.
