Rich Chocolate Pudding
Yield: Makes 4 servings
Ingredients:
2/3
cup sugar
1/4
cup unsweetened cocoa powder
3
tablespoons cornstarch
2
cups reduced-fat (2%) milk
1
egg
1/2
teaspoon vanilla
1
tablespoon butter
Preparation:
1.
Combine sugar, cocoa and cornstarch in medium saucepan; whisk in milk. Cook over medium-high heat, stirring frequently, until mixture boils; boil 1 minute, stirring constantly.

Beat egg in small bowl. Whisk about 1/2 cup hot milk mixture into egg; whisk egg mixture back into saucepan. Cook over medium heat 2 minutes, stirring constantly.

Remove pudding from heat; stir in vanilla and butter. Pour into 4 individual serving dishes. Serve warm or cover and refrigerate until ready to serve.
Serving Suggestion:
Serve pudding with banana slices, mandarin orange segments and cookies. Or top with scoops of ice cream or frozen yogurt and a sprinkle of grated chocolate.Rich Mocha Pudding:
Add 1 to 1-1/2 teaspoons instant coffee crystals to sugar mixture in step 1.
