Ricotta Cheese and Blueberry Parfait
Yield: Makes 4 servings
Antioxidant-rich blueberries lend their tartness to this pretty dish that's great as a snack, breakfast or dessert.
Ingredients:
1
cup whole milk ricotta cheese
1
tablespoon powdered sugar
Grated peel of 1 lemon
1-1/2
cups fresh blueberries
Preparation:

Combine ricotta cheese, sugar and lemon peel in medium bowl; mix well.

Place 3 tablespoons blueberries in each of 4 parfait glasses. Add 1/4 cup ricotta cheese mixture; top with another 3 tablespoons blueberries. Garnish as desired.
Variation:
If your carb count can stand it, sprinkle top with some chopped pecans or slivered almonds.
