Royal Icing

Makes 2 cups


4 egg whites*
4 cups powdered sugar, sifted
1 teaspoon almond extract or clear vanilla extract**

*Use only grade A clean, uncracked eggs.

**Icing remains very white when clear flavorings are used.


  1. Beat egg whites in clean, large bowl with electric mixer at high speed until foamy. Gradually add sugar and almond extract. Beat at high speed until thickened.


When dry, Royal Icing is very hard and resistant to damage that can occur during shipping.
