Salad of Green Papaya with Mint and Chili Oil

Serves 4

Ingredients

2 green papayas, peeled and seeded
2 tablespoons/30 ml fresh lemon juice (from 1 lemon)
3 tablespoons/45 ml grapeseed oil
1 ½ teaspoons chili oil
1 head frisée lettuce, leaves separated
¼ cup thinly sliced fresh mint leaves

Preparation

  1. Using a Japanese mandolin, cut the papaya into long thin strips. Place the lemon juice in a large bowl and gradually whisk in both of the oils. Season the dressing to taste with salt and pepper. Toss the papaya with the dressing to coat.
  2. Place the lettuce leaves over a large platter. Place the green papaya over the lettuce leaves. Sprinkle with the mint and serve.
