Ingredients

2 lbs Fresh Atlantic salmon
2 doz. small slider buns
Northwestern marinade
Spicy Aioli
1/2 cup butter
1/3 cup brown sugar
1/4 cup red wine
Salt & pepper to taste
1 cup mayonnaise
1/8 cup Thai chili paste
1/2 tablespoon espelette pepper
1/8 cup lime juice
1/2 tablespoon salt
1 teaspoon cayenne pepper

Preparation

  1. Mix all ingredients and chill until ready to use.
  2. Melt butter and sugar over medium heat, stirring constantly. Add salt and pepper, then red wine. Keep stirring for 1 minute until sauce thickens and bubbles up. Remove from heat.
  3. Pour over prepared salmon filets
  4. Grill salmon until just done. Cut into 2 in square files pieces and place on warmed, lightly buttered bun. Drizzle with spicy aioli and serve warm.
