Sausage and Polenta Casserole


Makes 4 servings


1 tablespoon olive oil
1 cup chopped mushrooms
1 small red bell pepper, seeded and diced
1 small onion, diced
1 pound hot or mild bulk Italian sausage
1 jar (28 to 30 ounces) meatless pasta sauce
1 roll (16 to 18 ounces) polenta


  1. Preheat oven to 350°F.
  2. Heat oil in large skillet. Add mushrooms, bell pepper and onion; cook and stir over medium heat 5 minutes or until tender. Add sausage; cook and stir until sausage is brown, breaking into small pieces with spoon. Drain. Stir in pasta sauce and simmer 5 minutes.
  3. Cut polenta roll into 9 slices and arrange in greased 9-inch square casserole. Top with sausage mixture.
  4. Bake 15 minutes or until heated through.
