Shrimp Scampi over Hot Tomato Relish
This version of shrimp scampi is prepared in heart-healthy olive oil with only a touch of butter. Add a green vegetable or mixed green salad for a quick, healthy dinner.
Makes 4 servings
|Hot Tomato Relish|
|1/4||cup olive oil|
|1||tablespoon unsalted butter|
|1||large clove garlic, minced|
|1||pound large raw shrimp, peeled and deveined|
|1||tablespoon lemon juice|
|2||tablespoons minced Italian parsley|
|1/4||teaspoon black pepper|
- Prepare Hot Tomato Relish and set aside. Combine oil and butter in large skillet over very low heat. Add garlic and heat 10 minutes; do not burn.
- Add shrimp. Cook over low heat 5 minutes, turning once, or until shrimp are opaque and cooked through. Stir in lemon juice, parsley, salt and pepper. Serve over Hot Tomato Relish with lemon wedges.
