Shrimp Toast

Shrimp Toast, a perennial favorite of Chinese cuisine, can be easily prepared at home following this delicious recipe.
INGREDIENTS
| 1/2 | pound raw shrimp, peeled and deveined |
| 2 | tablespoons chopped green onion |
| 2 | tablespoons finely chopped water chestnuts |
| 2 | tablespoons soy sauce |
| 1 | teaspoon dark sesame oil |
| 1 | egg white, lightly beaten |
| 6 | slices white sandwich bread, crusts removed |
| Red and yellow bell pepper strips, for garnish | |
PREPARATION:
- Finely chop shrimp. If using food processor, process with on/off pulses, about 10 times or until shrimp are finely chopped.
- Combine shrimp, onion, water chestnuts, soy sauce and sesame oil in medium bowl; mix well. Stir in egg white; mix well.*
*The filling may be made ahead to this point. Cover and refrigerate filling up to 24 hours. Proceed as directed in step 3.
- Toast bread lightly on both sides. Cut diagonally into quarters. Spread shrimp mixture evenly over toast to edges.
- Place toast on foil-lined baking sheet or broiler pan. Broil 6 inches from heat 4 minutes or until lightly browned. Garnish with peppers.
