Simple Salad with Tomato-Basil Vinaigrette

INGREDIENTS
| 1/2 | medium carrot, peeled, shredded |
| 1/2 | -each seedless cucumber, halved lengthwise, thinly sliced |
| 1 | Pound red-skinned potatoes, cooked, diced |
| 1 | bag (10 oz ea) mixed baby salad greens |
| 1/2 | Cup Tomato-Basil Vinaigrette (see Hunts.com for recipe) |
PREPARATION:
- Divide salad greens onto 4 salad plates. Top with cucumber, carrot and potatoes. Drizzle vinaigrette over all and serve.
- Serve immediately or cover and refrigerate up to 3 days.
