Simple Salad with Tomato-Basil Vinaigrette

Yield

4 servings (1 salad and 2 tablespoons dressing each)

Ingredients

1/2 medium carrot, peeled, shredded
1/2 -each seedless cucumber, halved lengthwise, thinly sliced
1 Pound red-skinned potatoes, cooked, diced
1 bag (10 oz ea) mixed baby salad greens
1/2 Cup Tomato-Basil Vinaigrette (see Hunts.com for recipe)

Preparation

  1. Divide salad greens onto 4 salad plates. Top with cucumber, carrot and potatoes. Drizzle vinaigrette over all and serve.
  2. Serve immediately or cover and refrigerate up to 3 days.
