Simple Turkey Soup
Yield: Makes 8 servings
Ingredients:

pounds ground turkey, cooked and drained

1
can (about 28 ounces) whole tomatoes, undrained

2
cans (about 14 ounces each) beef broth

1
bag (16 ounces) frozen mixed soup vegetables (such as carrots, beans, okra, corn or onion), thawed

1/2
cup uncooked barley

1
teaspoon salt

1
teaspoon dried thyme

1/2
teaspoon ground coriander

Black pepper



 
Preparation:
1.
Combine all ingredients in 5-quart slow cooker. Add water to cover. Cover; cook on HIGH 3 to 4 hours.


Cook's Comment Very easy to make. Try adding other frozen or canned vegetables or extra diced potatoes and carrots. Sliced, diced or stewed tomatoes can be substituted for the whole tomatoes. For a large crowd, add corn and serve with cornbread.
