Christine's Zucchini Bread
YIELD Makes 4 loaves

INGREDIENTS
| 6 | eggs |
| 1 1/2 | cup oil |
| 3 | cups sugar |
| 4 | Teaspoon vanilla |
| 6 | cups seeded and grated zucchini |
| 4 2/3 | cup flour, white or wheat |
| 2 | Teaspoon cinnamon |
| 2 | Teaspoon salt |
| 4 | Teaspoon baking soda |
| 1 | Teaspoon baking powder |
| 1 | cup chopped walnuts (optional) |
PREPARATION:
- Beat eggs, add oil, sugar, and vanilla. Mix well, add zucchini. Mix the dry ingredients in a separate bowl then add to the wet mixture. Mix until blended well. Pour into 4 well greased loaf pans. Bake at 350 for 45 minutes.
