YIELD Makes 4 loaves

INGREDIENTS

6 eggs
1 1/2 cup oil
3 cups sugar
4 Teaspoon vanilla
6 cups seeded and grated zucchini
4 2/3 cup flour, white or wheat
2 Teaspoon cinnamon
2 Teaspoon salt
4 Teaspoon baking soda
1 Teaspoon baking powder
1 cup chopped walnuts (optional)

PREPARATION:

  1. Beat eggs, add oil, sugar, and vanilla. Mix well, add zucchini. Mix the dry ingredients in a separate bowl then add to the wet mixture. Mix until blended well. Pour into 4 well greased loaf pans. Bake at 350 for 45 minutes.
