Southwestern-Style Chicken

Prep Time: 20 minutes
Yield: Makes 4 to 6 servings
Ingredients:
1
package (about 1-1/4 ounces) taco seasoning mix

1/4
cup all-purpose flour

to 8 boneless skinless chicken thighs or 4 boneless skinless chicken breasts, cut in half

2
tablespoons vegetable oil

1
large onion, cut into 1-inch pieces

2
green bell peppers, cut into 1-inch pieces

1
can (14-1/2 ounces) diced tomatoes with jalapeños, undrained

Salt and black pepper



Preparation:
1.
Reserve 1 teaspoon taco seasoning. Combine flour and remaining seasoning in large resealable food storage bag. Add chicken, 1 to 2 pieces at a time; shake to coat.

Heat oil in large skillet over medium-high heat; brown chicken. Transfer chicken to slow cooker; sprinkle with reserved seasoning.

3.
In same skillet cook and stir onion until translucent. Place onion, bell peppers and tomatoes with juice in slow cooker. Cover; cook on LOW 6 to 7 hours or until chicken is tender. Season to taste with salt and pepper.
