Speedy Beef & Bean Burritos

Ingredients:
8
(7-inch) flour tortillas

1
pound ground beef

1
cup chopped onion

1
teaspoon minced garlic

1
can (15 ounces) black beans, rinsed and drained

1
cup chunky salsa

2
teaspoons ground cumin

1/4
cup chopped fresh cilantro

2
cups (8 ounces) shredded Monterey Jack cheese



 
Preparation:
1.
Preheat oven to 350°F. Wrap tortillas in foil; place on center rack in oven. Heat tortillas 15 minutes.

2.
Meanwhile, brown beef, onion and garlic in large skillet 6 to 8 minutes over medium-high heat, stirring to break up meat. Drain fat.

3.
Stir beans, salsa and cumin into beef mixture. Cover and simmer over medium heat 10 minutes, stirring once.

4.
Stir cilantro into filling. Spoon filling down centers of warm tortillas; top with cheese. Roll up and serve immediately.
