Spicy Ale Shrimp
Yield: Makes 15 to 20 shrimp
Ingredients:
3
bottles (12 ounces each) pilsner beer, divided
1
tablespoon seafood boil seasoning blend
1
teaspoon mustard seeds
1
teaspoon red pepper flakes
1
lemon, sliced into quarters
1
pound raw large shrimp (15 to 20 count), deveined and shelled except for tails
Dipping Sauce (recipe follows)
Preparation:

Pour one bottle of beer into large bowl half-filled with ice; set aside.

Add remaining 2 bottles of beer, seafood boil seasoning, mustard seeds and red pepper flakes intp 1-gallon stockpot. Squeeze lemon juice into pot, add lemon quarters. Bring beer mixture to simmer over medium-high heat.
3.
Add shrimp. Cover; remove from heat. Let sit 3 minutes to cook shrimp. Drain; transfer shrimp to bowl of chilled beer and ice cubes. When cool, remove shrimp from bowl; arrange on platter. Serve with Dipping Sauce.
Dipping Sauce
Yield: Makes about 1 cup sauce
Ingredients:
1
cup ketchup
1
tablespoon chili-garlic paste
1
tablespoon grated fresh horseradish
Juice of one lime
Hot pepper sauce
Preparation:
1.
Combine ketchup, chili-garlic paste, horseradish and lime juice in small glass bowl. Add hot pepper sauce to taste; mix well. Cover; refrigerate 1 hour.
