Cauliflower And Chickpea Curry

I find that I become a really lazy cook during the summer months, especially when I'm at the cottage. I'd much rather be sitting on the dock with a book than standing at the stove cooking dinner. I tend to throw stuff on the grill, or occasionally get myself together to get my crock pot going in the morning. It saves time cooking, and there are fewer dishes to wash afterwards.

The problem with this kind of cooking is that legumes tend to get bypassed. We are eating plenty of fruits and vegetables, but we haven't been getting enough protein from legumes over the past couple of weeks. It's silly, because legumes are so versatile, you can eat them hot, or use them in a cooling salad.

I had some cauliflower and some naan bread on hand, so i decided to make an Indian spiced curry. I made a fairly dry curry to go with the bread, but if you wanted to serve it over rice you could add some stock or water, and more coconut milk to make more sauce. You could add some diced tomato or red pepper to this as well.

INGREDIENTS

1 tbsp vegetable oil
1 onion, diced
1 clove garlic, finely chopped
1/2 inch ginger, peeled and finely chopped
1/2 can chickpeas, drained and rinsed
1/2 caulilflower, cut into florets
1 tsp cumin
1 tsp thyme
1 tsp curry powder
1/2 tsp turmeric
1/2 ground coriander
1/4 tsp cayenne pepper
salt and pepper to taste
2 ounces coconut milk

PREPARATION:

  1. In a large skillet, heat vegetable oil. Add onions and cook until translucent, about 5 minutes. Add garlic and ginger and cook for another 2 or 3 minutes.
  2. In the meantime, boil a pot of water and cook the cauliflower until tender, about 5 minutes. Drain and set aside.
  3. Add chickpeas and spices to the onions. Add the cauliflower and stir to coat with the spices. Add the coconut milk (add more for the consistency you want) and cook until chickpeas and cauliflower have heated through.
