Spinach Cheese Strata

INGREDIENTS
| 6 | slices whole wheat bread |
| 2 | tablespoons butter or margarine, softened |
| 1 | cup (4 ounces) shredded Cheddar cheese |
| 1/2 | cup (2 ounces) shredded Monterey Jack cheese |
| 1‑1/4 | cups milk |
| 6 | eggs, lightly beaten |
| 1 | package (10 ounces) frozen spinach, thawed and well drained |
| 1/4 | teaspoon salt |
| 1/8 | teaspoon black pepper |
PREPARATION:
- Spread bread with butter; arrange in single layer in greased 13X9-inch baking dish. Sprinkle with cheeses.
- Combine milk, eggs, spinach, salt and pepper in large bowl; stir well. Pour over bread and cheese. Cover; refrigerate at least 6 hours or overnight.
- Preheat oven to 350°F. Bake strata, uncovered, about 1 hour or until puffy and lightly golden.
