INGREDIENTS

6 slices whole wheat bread
2 tablespoons butter or margarine, softened
1 cup (4 ounces) shredded Cheddar cheese
1/2 cup (2 ounces) shredded Monterey Jack cheese
1‑1/4 cups milk
6 eggs, lightly beaten
1 package (10 ounces) frozen spinach, thawed and well drained
1/4 teaspoon salt
1/8 teaspoon black pepper

PREPARATION:

  1. Spread bread with butter; arrange in single layer in greased 13X9-inch baking dish. Sprinkle with cheeses.
  2. Combine milk, eggs, spinach, salt and pepper in large bowl; stir well. Pour over bread and cheese. Cover; refrigerate at least 6 hours or overnight.
  3. Preheat oven to 350°F. Bake strata, uncovered, about 1 hour or until puffy and lightly golden.
