Stovetop Summer Squash

INGREDIENTS
| 1‑2/3 | cups water |
| 1 | package (6 ounces) stuffing mix with herb seasoning packet |
| 3 | tablespoons butter |
| 1 | cup chopped onion |
| 1 | cup chopped red bell pepper |
| 1 | tablespoon minced fresh basil |
| 2 | cups sliced yellow squash |
| 2 | cups sliced zucchini |
PREPARATION:
- Bring water to a boil in 2-quart saucepan. Add seasoning packet from stuffing mix; cover and cook over low heat 15 minutes.
- Meanwhile, melt butter in large skillet over medium heat. Add onion and bell pepper; cook and stir 3 minutes or until tender. Add basil, squash and zucchini; cook and stir about 3 minutes or until vegetables are tender.
- Transfer squash mixture to saucepan with seasoning blend. Add stuffing croutons; mix until all liquid is absorbed. Remove from heat; cover and let stand 5 minutes. Fluff with fork before serving.
