Ingredients

ground alligator
poblano peppers
bell peppers
bacon
rub
salt
pepper
garlic powder

Preparation

  1. Create a weave out of bacon. Place grilled alligator on top and add pork rub.
  2. Roll into a log.
  3. Cook in smoker at 250 degrees for 1 1/2 hours until meat is cooked and bacon is crispy. Internal temp of 170 degrees.
