Stuffed Apple Rings

INGREDIENTS

1/3 cup dried cranberries
1/4 cup pecan pieces
2 tablespoons butter, softened
1 tablespoon packed dark brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla
2 medium apples, such as Gala or Jonathan
Cooking spray

PREPARATION:

  1. Preheat oven 425°F. Line a baking sheet with foil; set aside.
  2. In medium bowl, mix cranberries, pecans, butter, sugar, cinnamon and vanilla. Stir until combined.
  3. Slice ends off apples, then slice each apple into 4 round slices, to yield 8 rings total. Remove centers, using the tip of a teaspoon to press down all the way around to remove pith and seeds.
  4. Coat baking sheet with cooking spray and arrange apple slices on baking sheet. Spoon equal amounts of cranberry mixture in center of each, (about 1 tablespoon each), press down gently to adhere and bake 10 minutes or until apples are JUST tender. Serve warm or room temperature.
Variation
Omit sugar and bake according to above directions. When cooked, cool slightly and drizzle 1 tablespoon butterscotch ice cream topping evenly over all.
