Sunny Day Breakfast Burrito

INGREDIENTS
| 1 | tablespoon butter |
| 1/2 | cup red or green bell pepper, chopped |
| 2 | green onions, sliced |
| 6 | eggs |
| 2 | tablespoons milk |
| 1/4 | teaspoon salt |
| 4 | (7-inch) flour tortillas, warmed |
| 1/2 | cup shredded colby-Jack or Mexican blend cheese |
| 1/2 | cup salsa |
PREPARATION:
- Melt butter in medium skillet over medium heat. Add bell pepper and green onion; cook and stir about 3 minutes or until tender.
- Beat eggs, milk and salt in medium bowl. Add egg mixure to skillet; reduce heat to low. Cook, stirring gently, until eggs are just set. (Eggs should be soft with no liquid remaining.)
- Spoon egg mixture down center of tortillas; top with cheese. Fold in sides to enclose filling. Serve with salsa
