Sweet Potato Pasta
If you're looking for interesting fall vegetarian fare, homemade pasta is a people pleaser. By incorporating harvest flavors like sweet potato and winter squash into your dishes, vegetarian main courses become dramatically more than just a meal without meat.
I'm married to a meat eater, but I don't eat meat except for the occasional piece of fish. But with dishes like these, we both feel satisfied. All you really need to pair this with is a baguette and a small green salad.
I adjusted a recipe from Joy of Cooking by leaving out one egg and replacing it with the moisture in the sweet potato. The pasta, however, didn't have a very deep hue because the variety of sweet potato that I used had very little color. Keep adding flour to the mixture until you get a dough consistency that's not too sticky.
INGREDIENTS
| 2 cups | unbleached all purpose flour |
| 2 | large eggs |
| ½ tsp | salt |
| 1 tsp | extra virgin olive oil |
| 2 | sweet potatoes, boiled, peeled |
| 3 tbsp | olive oil |
| 3 | cloves garlic, minced |
| 1 cup | freshly grated parmesan cheese |
| Sea salt | |
| Pepper | |
PREPARATION:
Method
- Form the dough by adding the flour to a clean surface and making a hole in the flour, like a volcano. Add in the egg, salt, olive oil, and sweet potato. Slowly combine until a dough forms. Or you can use the dough attachment in a standing mixer and beat for about 15 seconds.
- Knead for about 10 minutes, until the dough is elastically. Divide into four pieces and wrap up loosely with plastic wrap and cover with a bowl.
- Let the dough rest for 60 minutes. One at a time, unwrap the dough and roll it out. Cut the dough into 1/8 inch thick pieces or use a pasta maker to cut the dough (the second choice is much easier).
- Take about four pieces each, and store pasta pieces in loose coils. Dry on a wire rack for a few hours.
- Heat a large pot of water up to a boil and add 1 tbsp salt to the water. Add pasta but do not walk away. Use a fork to gently loosen the pasta coils so they open up.
- Cook about 2 to 4 minutes at most. Do not over cook. Drain the pasta.
- In a large skillet, sauté the garlic in olive oil until fragrant. Briefly add in the cooked pasta, just to coat. Top with parmesan cheese and serve immediately.
