Yield: Makes 2 dozen cookies
Ingredients:

cup unsalted butter, softened

1/2
cup sugar

1
teaspoon lemon extract

1
teaspoon orange extract

1/2
teaspoon vanilla

2-1/2
cups all-purpose flour

1/8
teaspoon salt

Assorted icings, colored sprinkles, sugars and decors



 
Preparation:
1.
Beat butter, sugar, lemon extract, orange extract and vanilla in large bowl at medium speed of electric mixer until creamy. Stir in flour and salt until well blended. (Dough will be crumbly.) Knead dough into smooth ball.

Preheat oven to 350°F. Lightly grease cookie sheets. Roll out dough, small portion at a time, to 1/4-inch thickness on floured surface with lightly floured rolling pin. Cut out dough with 3-inch umbrella-shaped cookie cutter. Transfer to prepared cookie sheets.

Bake 12 to 14 minutes or until edges are lightly browned. Let cookies stand on cookie sheets 1 to 2 minutes; transfer to wire racks to cool completely. Decorate cookies with pink and blue icings and sprinkles for baby shower, or colors to match wedding for bridal shower. Let stand until icing is set.


Tip These delightful cookies will win raves at baby showers. Look for fancy sprinkles at large supermarkets, specialty food shops or craft stores.
