Sweet & Sour Vegetable Couscous

INGREDIENTS
| 1 | can (14-1/2 ounces) vegetable broth |
| 1 | box (10 ounces) uncooked couscous |
| 1 | tablespoon vegetable oil |
| 3 | cups frozen Asian blend vegetable mix |
| 1/3 | cup stir-fry sauce |
| 2 | tablespoons honey |
| 2 | tablespoons lemon juice |
| 1/4 | cup sliced almonds |
PREPARATION:
- Pour vegetable broth into medium saucepan; bring to a boil. Stir in couscous and oil. Remove from heat; cover and let stand 5 minutes or until liquid is absorbed. Fluff couscous with fork; cover to keep warm.
- Meanwhile, place vegetables in microwavable dish. Microwave according to package directions; drain.
- Combine stir-fry sauce, honey and lemon juice in small bowl. Pour over cooked vegetables; microwave on HIGH 1 minute.
- Spoon couscous onto serving plates. Top with vegetable mixture and sprinkle with almonds.
Hint
For extra flavor and crunch, toast almonds. Place in small nonstick skillet; cook and stir over medium heat 2 minutes or until golden brown. (Watch carefully to prevent burning.)
