Maple Syrup Cookies

I had an over abundance of maple syrup because both my husband and I had bought some at the store last week. Good maple syrup is an essential pantry staple if you ask me. You know how I feel about maple syrup from my post on sweet potato pancakes. I beg you never to use what is referred to as "pancake syrup," the less expensive counterpart to maple syrup because it has not a single drop of maple syrup in it. That's right no maple. In fact, it's actually just high fructose corn syrup and caramel coloring. And of course, this is even more true of my maple syrup cookies.

This is a simple recipe with a subtle maple flavor. For additional maple flavor you could add maple extract as well (about 1/2 tsp). These cookies are great with afternoon or evening tea because they aren't too sweet. They have the flavor of a sweet biscuit.

INGREDIENTS

1/2 cup butter, at room temperature
1/2 cup packed brown sugar
1 egg
1/2 cup real maple syrup
1/2 tsp vanilla extract
1 tsp baking soda
1/4 tsp salt
2 cups organic all-purpose flour
1/2 cup granulated sugar for decoration

PREPARATION:

  1. Preheat oven to 350 degrees.
  2. In a large bowl, combine butter and brown sugar.
  3. Add the egg, maple syrup, and vanilla. Sift together the baking soda, salt, and flour. Add gradually until well combined.
  4. Use a spoon to form 2-inch balls. Roll in sugar. Use a fork to press a cross hatch pattern into the cookies.
  5. Bake 8 to 10 minutes. Let cool on wire rack.
