INGREDIENTS

8 eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/3 cup finely chopped green onions, divided
Nonstick cooking spray
4 slices Canadian bacon, cut in half
1 cup (4 ounces) shredded Swiss cheese

PREPARATION:

  1. Preheat broiler.
  2. Whisk together eggs, milk, salt and pepper in medium bowl until well blended. Reserve 2 tablespoons green onions; stir remaining green onions into egg mixture.
  3. Spray 12-inch ovenproof skillet with cooking spray; heat over medium-low heat until hot. Add egg mixture. Cover and cook 14 minutes or until almost set.
  4. Arrange bacon in pinwheel on top of egg mixture. Sprinkle with cheese; broil 2 minutes or until cheese is bubbly. Top with reserved 2 tablespoons green onions. Cut into 4 wedges. Serve immediately.
