Taffy Apple Snack Cake

YIELD Makes 9 servings

INGREDIENTS

1 package (18-1/4 ounces) yellow cake mix with pudding in the mix, divided
2 eggs
1/4 cup vegetable oil
1/4 cup water
1/4 cup packed brown sugar, divided
2 medium apples, peeled and diced
1 cup chopped nuts (optional)
2 tablespoons butter, melted
1/4 teaspoon ground cinnamon
1/2 cup caramel topping

PREPARATION:

  1. Preheat oven to 350°F. Spray 8-inch square baking pan with nonstick cooking spray. Reserve 3/4 cup cake mix; set aside.
  2. Pour remaining cake mix into large bowl. Add eggs, oil, water and 2 tablespoons brown sugar; beat with electric mixer at medium speed 2 minutes. Stir in apples; spread in prepared pan.
  3. Combine reserved cake mix, remaining 2 tablespoons brown sugar, nuts, butter and cinnamon in medium bowl; mix until well blended. Sprinkle over batter. Bake 40 to 45 minutes or until toothpick inserted into center comes out clean.
  4. Cool cake in pan on wire rack. Cut into squares; top each serving with about 2 teaspoons caramel topping.
