Veggie Wraps with Tahini Dressing

YIELD Serves 2.

Need a New Years' detox? If you're like me you're feeling a little bloated from all that holiday over indulgence. But you don't have to starve yourself. Eating more green foods while decreasing your processed foods dramatically can really help you get back on track. I made this for my husband last night and he loved it. It's filling, flavorful, and contains tons of cleansing raw veggies. The tahini dressing is key, so make sure you give it a try. Tahini is just a sesame paste that you can get at most healthy foods stores. As you probably know, it?s an important ingredient in hummus.

INGREDIENTS

2 whole wheat organic wraps
1 half cup alfalfa sprouts
4 leaves Napa cabbage, sliced and sauteed
1 Portabella mushroom, sliced and sauteed
½ red pepper, sliced
¼ cup cashew cheese, grated
A handful of raw chopped cashews
Tahini Dressing
1 tbsp Tahini
1 tbsp organic soy sauce
1 tbsp organic olive oil
1 clove garlic
1 inch piece fresh ginger, grated
¼ tsp curry powder
¼ tsp chili powder
¼ tsp pepper

PREPARATION:

Method

  1. Top the wrap with all the ingredients.
  2. Use a whisk to mix all the ingredients in the Tahini dressing and top the wrap with the dressing.
