Tasty Tortellini Salad

YIELD Makes 3 (1-1/3-cup) servings

INGREDIENTS

8 ounces refrigerated reduced-fat cheese-filled tortellini or cheese-filled cappelletti
1‑1/2 cups broccoli florets
1 cup carrots slices
2/3 cup reduced-fat creamy Caesar salad dressing
1/2 cup grape tomatoes, halved
2 tablespoons sliced green onion
3 tablespoons toasted soy nuts or sunflower seeds

PREPARATION:

  1. Cook pasta according to package directions; drain. Rinse with cold water; drain well.
  2. Combine pasta, broccoli, carrots, salad dressing, tomatoes and green onion in large bowl. Gently toss. Cover and refrigerate 2 hours or until well chilled. Sprinkle with seeds; serve immediately.
