Tropical Breeze Oatmeal

By the time you read this post, I will be in Kenya visiting the tea plantation in Kericho. Unilever is the world's largest tea company and they have asked the NGO Rainforest Alliance to begin by certifying their tea plantations in Africa. The goal is to have certification for all Lipton tea bags by the year 2015. Lipton has invited a number of journalists to Kericho to see how this works first hand, and I am the lucky TreeHugger writer to be asked to go.
I'll be writing about this trip on TreeHugger either next week or the week after, depending on the internet access in Kericho. In the meantime, Lipton has kindly sent along a number of recipes using tea for Planet Green readers to try. I admit that I have never thought about cooking or baking with tea as an ingredient. I often have oatmeal for breakfast, so this was the one I tried first. This turned out to be really delicious and a nice simple way to elevate a plain bowl of oatmeal. I don't like my oatmeal too sweet, so I added the brown sugar on top, rather than incorporating it into the recipe. If mango and peach isn't to your taste, they also have teas with berry flavours and orange flavours, and they would also work here.
INGREDIENTS
| 1‑3/4 cups | 2% milk |
| 4 LiptonĀ® | White Tea with Island Mango & Peach Flavors Pyramid Tea Bags |
| 1 cup | quick-cooking oats |
| 2 Tbsp. | firmly packed dark brown sugar salt |
| 1/4 cup | dried cranberries |
PREPARATION:
- Bring milk just to a boil over medium-high heat in medium saucepan. Remove from heat and add the tea bags; cover brew 5 minutes. Remove tea bags and squeeze. Return tea mixture to a boil. Reduce heat to low. Stir in oats, brown sugar and salt. Simmer, stirring occasionally, 5 minutes or until oats are tender and mixture is creamy. Stir in cranberries. Garnish, if desired, with chopped toasted almonds.
