Tex-Mex Chicken Kabobs

Makes 4 servings


3/4 cup barbecue sauce
1/4 cup molasses
2 tablespoons orange juice
2 teaspoons chili powder
1 pound chicken tenders
1 cup (1-inch) red bell pepper pieces
1 cup (1-inch) onion pieces
1 cup (1-inch) zucchini pieces


  1. Preheat broiler. Combine barbecue sauce, molasses, juice and chili powder in small bowl; stir to blend. (Sauce mixture can be covered and refrigerated for up to 1 week before using, if desired.) Reserve 2/3 cup sauce mixture for serving.
  2. Weave chicken alternately with vegetables onto metal skewers. Broil or grill kabobs 15 to 18 minutes or until chicken is no longer pink in center, brushing with remaining 1/3 cup sauce mixture and turning every few minutes. Do not baste during last 5 minutes of cooking. Discard any remaing basting sauce. Serve with reserved 2/3 cup sauce mixture.


Bottled barbecue sauces vary from sweet to tangy and from mild to spicy. Some also have a smoky flavor. For this recipe, choose a mild, tangy barbecue sauce.
